The reason I am asking this because I just discovered that if you minimize an app or even the Finder it will make these apps idle furthermore less CPU usage and Energy. (Tested it on Activity monitor)

And it's also makes the desktop clean.

So is there a keyboard shortcut to minimize all windows for all apps ? And another one to unminimize all windows for all apps ?

How about "Hide Others" under the application menu? Cmd-option H.

With at least one app hidden, the "Show All" item under the same menu should undim. It doesn't have a keystroke, but you can add a custom one.

Presumably, Hide has the same effect on CPU usage as Minimize, but you should test first to confirm.

I use command-option click on the desktop to minimize all open apps, but I don't know a command to maximize all. You could also designate a hot corner to Desktop, which allows you to toggle between both views.
