Looking into doing a project with a Mac pro 3,1 motherboard (I will not be using the original case) for a total of 14 drives. The 6 sata that originally comes with the motherboard and adding 8 more connections via pcie for a total of 14 drives.
 
Not sure about the 3.1
But an 4 port esata (sata3) card can run my external 16 bay at full speed on my 5.1
 
CalDigit HDPro and CalDigit HDPro2 (and larger rack mount version) used to be great for PCIe expansion for 8+ SATA drives and was configurable in hardware RAID5. Was using with a MP3,1 and MP4,1 awhile back. They are no longer being made, but if you can find a used unit they offered stellar speeds. (Basically like the Promise Pegasus via PCIe expansion.)

I'm using my ARECA ARC 1882 and 1883x (external disks) with an actual count of 16 external hard disks/SSD's
You can use any hardware RAID configuration with SAS and SATA up to 12 Gb/s (1883), 6Gb/s with 1882x
There is a maximum of 256 hard disk devices.... and/or SATA or SAS SSD's

btw: I had bad experiences with erratic data loss using HighPoint RAID controllers.
No problems with ARECA...
