there are many times I want to change from phone mode to speaker, since I have the watch now it gives me several options instead of going to speaker phone directly. Is there an option to have speaker be default option?
 
You bet there is! It's just hidden under the Accessibility options, but I'll guide you through:

Settings -> General -> Accessibility -> Call Audio Routing -> set to Speaker.

Now, any phone calls you give or receive will automatically go through the speaker. Let me know if this helped!

Appreciate the help. When I do this it automatically sets every call to start with speaker. I'm trying to make it so that I can initially start a call using the phone and once I tap on the speaker it will go straight to speaker instead of giving me other Bluetooth options.

Aha, gotcha. I don't think there's a direct setting to change this. The only way for it to switch to the speaker immediately is if you have no other available connected Bluetooth devices at that time. When I connect my headphones, for example, the menu pops up. But when disconnected from the headphones, it switches directly to the speaker.
