On my old iPhone 7+, the power button is simple. To turn off the phone, I press and hold, and it shows the slide to turn off.

On my iPhone 11 Pro (and I guess all FaceID iPhones), this is not the case anymore. Press and holding it by default pop up the stupid Siri. I had to search around the settings just to turn that off. Still, no way that I found to easily turn my phone off. Apparently I have to press and hold both the volume down and power button to do so.

Is there a workaround? I remember in the old iPhone, there’s a way to set up assistive touch to shut down the iPhone as one of the button taps. That’s also gone. Sure, I can unlock the phone, go to settings, general, and tap shutdown. But 4 steps just to turn off the phone? Any better ways? I mean what happen to people who have dexterity issue? That was the reason it existed in assistive touch, but not anymore. 🤷‍♂️

Also, with iOS 16.4, you can now create shortcuts to shut down or restart your phone. Could put a button somewhere on your Home Screen.

You can still restart the phone using AssistiveTouch (Device->More->Restart). Don't think it was ever possible to shut down the phone using Assistive Touch (at least going back to iOS 12), which makes sense to me. If one needs assistance to shut down, how would they turn it back on?

As others already mentioned, you can tell Siri to do it for you, or create shortcuts.

Squeeze either of the volume buttons and the "Power" button at the same time then slide the slider to shut the phone off. That's probably the fastest way to shut a phone down.

The issue is, if you’re not careful, you can accidentally send out an SOS using that method.
