Is there a function in ios 11 (that i have missed) or an app that I can download, that will allow me to restrict a person using my phone to 1 or more set apps that I chose, or even to 1 viewing screen?
 
Yes, as mentioned above, Guided Access will accomplish this. You can open an app, then enable Guided Access (you can set it to a triple-click of the power button), then the user will be unable to leave that app. Home function is disabled. To exit Guided Access mode, you double-tap the power button, then enter your passcode/FaceID/TouchID.
 
As others have said, you can uses Guided Access; however, you'll have to do the steps for each app. If you are talking about preventing opening apps other than the pre-approved, not sure you can.
