I know this is kind of like remedial iOS usage but whenever I try to add a new app to my home screen (long press on the app from the app tray, drag it out), things move around so quickly and it always gets completely out of order. Is there any way to do this in a more controlled manner?

You can use two fingers. One to hold the app and the other one to change the pages

Not really a solution from my side but I also hate it, widgets have made it worse. Apple really needs to re-think the whole Home Screen set up experience. I have two widgets on my first screen among app icons. When I try to add an app to a folder on that page, it throws the widgets and app icons all over the place

I don't move the Icons around much.
sometimes a software update will mess a couple up.
I sense that it is possible to predict which Icon will zoom off where, though.
I haven't bothered to faff around with the screen to determine the pattern.
I see the event as a game of checkers, and only bother when setting up a new phone.
I was enthused about the widgets until they were released; then it was, meh, too unpolished.

I'm right there with you. Losing the ability to rearrange apps on different screens from iTunes is a loss I'm still mourning. I hate how they all snap around when I move anything.
