Is there a way to to hide most USB hard drives on the desktop but have thumb drives or SD cards show up?

Don't think so. Workaround is to add your thumb/sd drives to dock (just drag the drive from Finder to the downloads/trash bracket of the dock while it is mounted). It persists as a dock entity even when/after the drive is ejected, then works normally when the drive is connected again. Kind of a fun trick.
