is there a way to to set the iPhone to stop using cellular data after 1gb or whatever amount I set it to? or is there an app that can do this?

I do this on my Samsung Galaxy Note 20 Ultra(but almost all Android phones I've used have this function built-in in the settting menu)

My mobile cell provider requires confirmation for continuance once I reach my limit.

There are apps that let you keep track of cellular usage but I’ve never seen one that cuts you off at your limit on iPhone.
Currently you just need to either check the iPhone cellular stats or one of those apps or your cell provider each day to keep tab.

There used to be a jailbreak tweak for that. I can recall it existing, but I never installed it because I've always had unlimited data with my smartphones.

I did have one tweak installed that was capable of warning you when you were approaching a limit you set.

If something like that does exist now, it's probably going to still be a jailbreak tweak or app.
 
Sprint Carrier use to have this feature on there end back when there was a data cap on different plans

They would shut you down and text you that you used your allotted data

Maybe US don’t have this but I know that other countries out side of US does have a data limiter set options on their carrier plans. Especially parental controls where they want to limit their children use of cell data over a billing period, Not just data but also calls and SMS text messages.

I for sure would love to see this feature come to the US, especially when you have kids on the plan, need to able to limit their use.
 
Many mobile plans here in Europe still have data caps. I have one, but I pay 9 euros pcm for 5 GB data and unlimited calls and texts.
