I'd like to swipe to unlock my phone before putting in a password. Is there a way to bring that gesture back and remove the home button unlock gesture?

Hmm, have a look in settings \ security. Not sure if it is possible. But, I guess the bigger question would be, "Why?"
nope it's gone unless it comes back as a jailbreak tweak. by far my biggest complaint as I never used passcode but now I have to just so I don't have to press home twice. ridiculous move by them
If this is the case, then mission accomplished. Nobody ANYWHERE should leave their phone passcode free.
I can see how older phones would be affected.
I've had my 7+ for almost a week and had to learn a few new things, coming from a 6+. Biggest one is raise-to-wake; pickup the phone, the screen comes on, and single press of the home button unlocks the phone. A big part of that is the much faster Touch ID sensor.

There's a way you can just touch home button to unlock instead of pressing. Go to generals, accessibility, home button and select rest finger to open.
Sure. But this does not mean we could not try to persuade anyone not using passcode to protect their device to use a passcode.
This is so mind-bogglingly stupid of Apple to do. Swipe to unlock is almost patently Apple. For them to remove this and not give the option of users returning to it just shows that this company is really losing their marbles - especially ignoring users who have older iPhones.
I'm very unimpressed with iOS 10. The new interface and design language in things like the control center and notification center is God awful. The messages app is unnecessarily crowded, cluttered and complicated. Seriously, this is really surprising how far and fast this company is sliding without the leadership of Steve Jobs.

Pressing the home button is different than sliding but it's hardly more complex (and really can be seen as the opposite of that) or somehow crazy or anything like that.
Surely pressing the home button twice is easier than pressing the home button, moving your finger off the home button, onto the screen and then swiping?
I think it's just what you are used to and your muscle memory. I appreciate that if. You are using an older phone, there is a change in the way that this works, but for those of us on the newer phones it is a big step forward and makes operation much better.
You could argue that Apple could have given you the option to retain the old swipe but I think given how complex the settings are already getting within iOS this was probably a design decision.
As I say, I personally think it is much easier to press home twice if you have an old phone

^^this. My fingers are jacked up from years of working construction. I can't use TouchID. And i hate punching in a six digit code hundreds of times a day. I don't think I have any real sensitive information on my phone so I have no need for a passcode.
