or go to a different app? It's a pain that I have to sign back in every time.

No, the SDK won't allow it. But apps like Beejive will send you a text or email.
 
as fishkorp said, the iPhone SDK will not allow the app to stay logged in. However, Beejive IM and MobileChat (Still a bit buggy, but working) will keep you logged in on the server, so if you receive an IM when the app is closed, they will text you or send you an email. IM+ (a free IM app) is also going to add this feature later in the month.
 
this should improve once apple gets push services to work reliably enough to bring it out to the users...

the initial plan was to roll it out in september which they obviously failed to do, but hopefully they'll deliver it with the next software update!

Push won't really improve the situation except that apps with a server architecture like BeejiveIM will be able to use that instead of email/text you when you get a message with the app closed.

Yes, maybe, but if the app will stay online constantly unless you sign out, it can significantly drain your battery, which can be fatal if that becomes a normal routine with the iPhone/iPod Touch.
 
Yup, Beejive (AMAZING) will keep you signed in when you quit the app. It won't tell you when you have a new message (yet ;)) but you will stay signed in and when you re-launch you will receive all the messages you didn't have the app open for. I would not suggest buying MobileChat, but Beejive is great!
