I do have a 2nd Gen iPod Touch, but it's not compatible with iOS 5, so it won't work with iCloud. Does iCloud offer any useful benefit to me if I only use it on my Mac, or would it be entirely pointless for me to se it up?

you still get the email address and webstorage...if you use calendars or address book, it will be a good way to backup your contacts and calendars, and if you have or use multiple macs you can keep some stuff in sync between the two, particularly if you use iWork. The photostream will keep your iPhoto libraries (somewhat) in sync

other than that, not much benefir

Some backup, sync between multiple macs (or PC for some things) web access to email, contacts, calendar, photos etc.

Less appealing without iOS, but some people might want it.
