I've done some searching on this but couldn't find anything solid.

Scenario: Start Apple Music from my Mac, with headphones. Get up to go do something in another room, with phone in pocket. Want to go to the next song using my phone.

How can I do this? I just switched from Spotify and this was a very simple functionality that has existed for a long time. Am I missing something?

Although I haven’t tested it, does the iTunes Remote app work with Apple Music?

I tried this but it looks like it only controls music you’ve added to your library. It doesn’t interface with Apple Music streaming at all. Sigh.

I had the same 'problem'. Solution for me was to install Google Chrome and remote desktop add-on on Mac and Google remote desktop app on ipad or iPhone. I can now control the Mac from these devices. I guess you'll find instructions on th web on how to install.

Other ideas...Do you have an Apple Watch? Play from the Watch rather than the Mac, since the Watch follows you around. Alternatively, play from your iPhone since the Watch can control the iPhone. If you don't have a Watch, play from your iPhone instead of the Mac.

In my case it's the headless Mac Mini connected to my AVR. In order to enjoy full hi-res lossless it's the only way to go. But I don't want to switch on the TV each time I just want to listen to music.
Compared to Apple TV connected via HDMI, the Mac Mini into my Zen DAC and into the AVR (analogue) the quality difference is noticeable. For Atmos Music of course the only choice is the Apple TV

i have been using audirvana on my headless mac mini, which allows control of tidal and qubuz. hopefully it will support apple lossless music as well soon, at which point you could use the audirvana remote app on your phone....

but in the meantime, i can't find any way to control apple music streaming on my headless mini from my phone, other than some sort of screen share... which isn't ideal...
