I used this constantly so I’ve been incredibly frustrated by iOS 13. I absolutely hate it. I try googling for solutions and I just see a bunch of new asinine gestures like quadruple tap for a paragraph.

I don’t want to quadruple tap paragraphs. I want “select all” back. Is there a way to reliably do that? I can’t figure out why sometimes it shows up and sometimes it doesn’t.

Yeah, it changed a fair bit. https://ios.gadgethacks.com/how-to/...r-make-selections-perform-edits-more-0203292/ covers most of the actions, and essentially the “Select All” that you should be able to get as an option if you tap on the cursor itself (assuming we are taking about it all in the context of entering text).

Am I just dumb? Even after reading that article and selecting text, I still don't ever see an option to "Select All"

EDIT: I am just dumb. I think I figured out that I was pressing too long trying to bring up 'select all' as on option. It really is more of a tap than a press.

I was wondering this as well because I use "select all" all the time and it only is displayed some of the time for me.

You're not dumb. It's not intuitive. These changes required flowcharts to figure out how to do the same stuff we just knew how to do before. We work for them. Not. The. Other. Way. Around.
