I have noticed that all of the non native programs (MS Office 04, Ircle, Firefox etc..) all open up very slowly and run kind of sluggish. I thought I just needed more memory but I installed a gig in the macbook today and all of those programs still take forever to open up. Whats the deal?

They are going to be noticeably more sluggish due to the need for Rosetta translation. Adding RAM can help, but you're not going to find native speeds on these apps.
MS Office takes me 5 bounces, or around 3 seconds. I have a 1.83 GHz MacBook and 1.5 GB of RAM. If I QUIT Office entirely and open up MS Word again, it takes 2 bounces.
MS Office actually starts up slow as hell, but for a reason. It's doing something with the fonts on your system. There's a way to stop OSX from doing a check every time you open an Office app for the first time. I forget how, but search the forum.

you said it yourself, they aren't native. They are being emulated by Rosetta, which has to simulate a Power-PC processor at a significant speed loss.
FireFox IS an universal binary at this point. So it should run natively. Recently there was an update to the UB that seemed to improve it significantly
