I wanted to update my phone through itunes and when i plug in the phone to itunes i only get options ”Set up phone as new or from backup”.

And when i cancel i cant see anything else. Before you could se the serial number of phone, storage and sync and all that. This happends on both iphone 6 and iphone x.

Itunes is updated to the latest.. so what im i doing wrong ?
 
I think they changed it with the newer macOS versions (maybe?)

Yeah, make sure iTunes and your phone are all on the latest OS version.

What if you can't update Itunes cause your computer wont let you? I get an error message and tried everything. I have yet to try deleting Itunes out of fear that if I do I will have the same issue and wont have Itunes at all.
 
I had to download and reinstall iTunes, after updating iMac from Yosemite to High Sierra. Then, with the phone connected, launch iTunes and get a Software Update popup, download this and all working again.

That could certainly be the problem. When I got my new phone I had problems with iTunes/iPhone integration. [Unfortunately I don't remember the details]. Apple support suggested that i upgrade to Mohave so that both devices were running the current versions. When I did that the problem went away.

itunes is updates to the latest.
As I said in order to get my phone working with iTunes, I had to download another copy of iTunes - not necessarily an update though, at least mine showed as no updates available, before the small popup window “Software Update” appeared.
 
Any reason you haven't updated to Mohave? My concern is your OS version as well as IOS version, with everything in synch (iTunes version, OS version, IOS version).
