I struggle with some font sizes and colours. So I need a 14 or 16 font in a good solid black even bold at times. All there appears to be in Big Sur is a larger or smaller choice and no choice to alter the fonts in things like the Mail app columns and headers or toolbars. Text in mails is barely acceptable with the larger/smaller keys but on the left I have my folders for instance and they are barely readable for me. I used to increase the size and make bold and they were fine.
The accessibility preferences are a joke now. No ability to fine tune fonts and colours. Either Apple give a fig about accessibility issued or they don't. This over simplification of functions is now a big negative and needs to be addressed.

Windows allows, arguably, to much micro adjustments and you can end up with a mess. In this area Apple is normally just within acceptable levels of user settings. But is this a result of the drive to get closer to IOS ? Thing is MacOS is not just a consumer OS it’s an important business tool as well.
This is not only useless for people with vision issues but everyone. You need some decent level of customisation and this is sub optimal by any measure

It’s been like this since Lion. Before Lion you couldn’t even adjust the sidebar font size.
The rumor’s of macOS’ demise have been vastly exaggerated.
MacOS hasn’t been a customization platform since OS9...


For font tweaks, try TinkerTool - you can adjust the system font size there.

Uh, so install Catalina, if it does what you want in the way you want it done?

Maybe changing the scaling in the Display System Preferences is an option.
