I am nearly 100% sure that with prior versions of iTunes I could convert music in my playlists from MP3 to AIFF. Now with iTunes4 I am importing the music from my CD collection using AAC, knowing that when needed I could convert to AIFF but I don't seem to find a way to do it. Is this no longer possible ? I know I can import from CDs in AIFF directly, but I expected the capability to convert AAC imported music to AIFF.
What am I missing ?

It's part of the DRM - purchased music cannot be directly converted to AIFF to circumvent the lock. You Have to burn CD first, then AIFF. Also music that has been ripped from a legal CD to AAC - if you already own the CD, why would you want to convert to AAC, and then AIFF. Unless you don't have the CD it's a mild frustration a worst.

I think it is a way of making sure that you get a worse sounding file if you don't rightfully own it and try to re-encode, rip and copy.
 
thanks for the explanation - I suspected it might have to do with that even though it makes little sense to me since I am only talking about my own music (from CD).

As to the frustration, I indeed disagree, it is not minor to me AT ALL - you got to consider that this depends on what one is doing. In my case I rip my music from the CD's in AAC (for the iPod). The times that I need AIFF is when I want to use it in my videos: before iTune4 it was really cool: I would explore my library, decide which pieces I would need in FCP and then convert it to AIFF and that was it. Now, I will have to go back to the cd, may be 10 different cd's and re-rip in AIFF. Again, this is a pain. But if that the way it is, I am afraind there is nothing I can do with it.

You should be able to convert AAC files to AIFF files by changing the 'Import preferences' to import as AIFF. Just remember to change then back to ACC, when importing for the iPod.
