I haven't tried upgrading to 1.1.2 - I'm happy and everything is working so great with 1.1.1 I figured why risk it?
I do want to know if I can upgrade to iTunes 7.5 though and still safely use my hacked 1.1.1? Can anybody verfiy?

Upgrading iTunes will not affect anything related to the iPhone. The only affected app that I can think of is iNdepedence but the latest version 1.3beta2 comes with a mobdev tool which will load the old mobiledevice.dll in case you have iTunes 7.5.
 
I have unlocked 1.1.1 coupled with iTunes 7.5 on my Mac and it's fine, no problems at all.

Just disable the auto update in preferences.

I had iTunes 7.5 befofre I got the iPhone and disabled the auto update so iTunes tells me my software is the latest.....
