ITunes Backup Files

I searched and was unable to find the answer.....

When ITunes backs up your iPhone, where does it store these files? Can you choose to restore to a different file then the one it chooses?

Here is my example:
1. I backup my iphone before a Jailbreak.
2. I jailbreak
3. ITunes then creates a new backup with the jailbroken files in it.

If I restore back to virgin status, how can I go back to the restore file in step one above? Right now it will just restore the backup from step 3.

Any help would be appreciated!
