Ok, I know this is a problem that has had a lot of attention in the past, but despite searching here, and the internet in general for hours, I still can't seem to find a definite solution:

When I plug my iPod via USB into my MacBook, it is not recognised in iTunes or on the desktop. Disk utility also doesn't appear to see it.

My iPod is charged, the usb cable works, the usb ports on my Mac work too for other devices. I've tried plugging it into my Girlfriends Mac too and the same happens, nothing.

I have tried the famous "5 R's" lots of times, as well as everything I have found online, and nothing is working. I really am at a loss, it's only 2 years old, hasn't been used much at all, hasn't taken any bumps, and worked fine a fortnight ago. The only thing that does happen is that when I plug it in the screen on the iPod lights up, the same happens when I unplug it too.

If anyone has had the same issue and could lend a hand that'd be sweet.

I have the exact same iPod and the same issue which happens from time to time. You're right about Disk Utility too. It seemed to start happening sometime after iTunes 8 or OS X 10.5.4. The only thing that works with mine, when it happens, is removing and rebooting the iPod, and then putting it back in the dock.

It is reassuring, sometimes it's easy to think these things are only happening to yourself.
It started after I installed 10.5.8 on mine, and strangely after I also started using an old dock that I got with my iPod 3G... Not sure how that could be related though.

I have tried removing and rebooting, but to no avail, I'm thinking a trip to the Apple store, but I would like to fix it myself!

Snap... with the dock. Have you tried the standard USB cable? But I suspect it's a Leopard thing, perhaps to be fixed in Snow Leopard or higher versions of Leopard.
 
I'm having the same problem with mine too. My friend that works at the apple store couldn't even help me out beside reseting the ipod and making it a data disk. Nothing works. So it might save you a trip there. Nobody at the store knew what to do besides that. Oh yeah and mine is doing that on 10.4.11 it also isn't recognized on a pc.
