Both my iPhone 6s and my MacBook Pro are locked for 90 days to a specific iTunes account. Does anyone know how to unlock them?

I do not understand the point of that lock. I have heard previously it is something to do with copyright, but that does not make sense. Anyone know?

It's to stop you device hopping to download stuff on others devices. Simple

Well, I have my iPhone set to my Canadian (main) account, and my iPad set to my UK account. If, what I want to watch is not on my phone, I download and watch it on my iPad.

That's your issue. Regional restrictions are not set by Apple but the content provider.
