is there any way to get iTunes to monitor files being downloaded/ripped/transfered over the network and automatically load the new files? Sorry, I'm used to Windows Media Player loading them for me

i know this won't address your immediate concern, but if you are ripping with iTunes, songs will be put in automatically. otherwise, i think the quickest and easiest way is to just drag and drop a bunch of songs into iTunes. iTunes will then categorize them in fine fashion...

What you want to do is go into the network and find where the audio files are located on the computer from which you want the songs. Then drag the songs you want into the iTunes window. That should copy them just fine.
