If I delete a song on my iphone/ipad it's synced back from my mac next time it's connected to my mac.

This is obviously not proper syncing if it only works from one end point. Is there a setting I can change to actually keep itunes library in sync across my units without using the icloud crap?

iTunes on your Mac is your master library. The sync is setup correctly in a manner if your iDevice is missing any songs that were included in the sync from your Mac prior it would add it back. What I would suggest you do is clean up your iTunes library by removing songs you don't want synced to begin with and then sync your iDevices. I've done this for many albums,songs and playlists.

Agreed....Another option is to set iTunes to only sync checked songs, and just un-check any songs that you that you do not want on your devices. This saves you from the hassle of having to re-download a song/songs if you later decide that you want it back on your devices. FWIW, I have been doing it this way for years...
