I currently have iTunes on my iMac and I have an 80GB iPod. Connecting my iPod and just downloading changes/additions is quite easy. Suppose I get an iPhone; how would that work in terms of transferring only certain songs or playlists to the iPhone?

Would I be able to have the two devices treated and acting differently with iTunes? What I do not want to do is have the exact same things on both devices. I'd like the iPhone to hold much less content from iTunes than the iPod does. I'd not want ITunes to start making changes to the content when I connected the iPhone.

How simple would it be to set it up the way I'd like?

Just set up your iPhone to only sync selected playlists. I myself have created Playlists for each device I have, and always include the Smart Playlist Recently Added so I always have my newest music on my iPhone/iPods.
