Is it at all possible to wirelessly sync an iPhone without an internet connection? It doesn't support Bluetooth at all, but it can sync over wifi. So I tried connecting the iPhone to Mac using a “computer-to-computer” network, but the sync didn't work.
 
iTunes Wi-Fi (Bonjour) drivers recuire WLAN network to work, and it should work even without the internet connection. You just need a working Wi-Fi router and that both computer and device would be on the same Wi-Fi network.

Not sure I understand. You do not have a home network with a router or other device that supplies IP addresses? That should work (haven't tried) even without internet address.
In the Wi-Fi menu there's an option to create a computer-to-computer (aka ad-hoc) network

It works for direct-connecting in games and such. But apparently it doesn't work with iTunes wifi sync :(

I just wanted to know of a way to sync with nothing but the two devices. But unsurprisingly it isn't possible. They could have let you use Bluetooth or make it work on an ad-hoc network. But nope.
