My 16” is due on Monday, and it’ll be my first new Mac since my 2009 MBP (I’ve been iOS exclusive for about 2.5 years).

I want to bring over things like my iPhoto library and iTunes library, but I want everything else to be pretty stock so I’m not bringing over outdated apps or other leftover cruft.

What’s my best bet for getting over, primarily, an old iPhoto library that was never converted to Photos?

Yep. It’s still there on the 2009 MBP. But I think there’s also an existing photos library on there from the few times I’ve connected my phone.
 
I seem to recall we converted an old iPhoto library to the new Photos and it worked pretty seamlessly. There are also some tools in the Mac App store that can find duplicates, and clean out your photo library after you upgrade it.
 
Easiest way is to use the Migration Assistant to just move your user account, which will bring over everything user-related, including the iPhoto Library (assuming it is in the default location).

The down side is will bring over everything...so your user data cruft comes over too. The opposite of a clean start.
You can do some house cleaning on your user account before or after the migration.

One nice thing is that it is a copy, not a move. So your old machine is unchanged, and if you were unhappy with the migration, you could delete the user on the new machine and go to plan B.

If you want to migrate your user, it is easiest to do it before you make a new user account on the new Mac; do it when prompted on your first boot.
