Just to clarify before I go and jump off the deep end I just want to confirm that i can jailbreak my iphone 3G (with 2.2.1 firmware) then once yellowsn0w (or whoever) releases an unlock for it further down the line I can then use that to unlock. I just became confused thinking that I would NEVER be able to unlock if I jailbroke it...if someone could clarify this for me it would be great!....sorry but I need these things explained in pigeon English before I go off and cock it all up! cheers!

If you have already updated to 2.2.1, then you've updated the baseband to a version which doesn't work with yellowsn0w, so you just have to sit and hope that the dev team comes up with a version that works with that baseband. At this point, jailbreaking or not is irrelevant to whether you can unlock or not.

If you haven't updated to 2.2.1 yet, I'd advise you not to update. Keep it on 2.2, jailbreak, and unlock. While there are ways to update to 2.2.1 wihtout changing the baseband, if you are asking "what's a baseband?" then in my opinion, it's just simpler to keep using 2.2.

Is there any reason to use yellowsn0w if I will remain on AT&T?
