Hey guys, if i jailbreak my phone and then i for example, get a lot of messages that i want to save and maybe beat my high score on a game or something, can i remove the jailbreak later and keep the texts and savegames?

as long as you do the backup before jailbreaking

Yes just backup, and then restore from that backup.
