I want to jailbreak my iPhone, but this SSH & hacking issue really worries me. What exactly is SSH, will I be hacked only if I have SSH enabled, and is SSH automatically enabled & installed when I jailbreak & dl Cydia?

It allows you to send commands and get into your files. SSH can be useful to fix your if your interface goes missing or messes up (it's certainly saved me several times). But its entirely optional and can be uninstalled.

SSH based tools can be incredibly secure when setup properly, (after all, one of the S's stands for SECURE ;)). The default install has a preset password installed which you can easily (and should) change. Or you can setup private key pairs to login, there's plenty of tutorials on the web.

Can I ask why you are so worried about it? Some people have had their phones 'hacked' in the past because they were too stupid to change the default password.

Is it an easy uninstall? I only plan on doing some simple customization and downloading a couple of apps so I don't think I'll be on the risk of screwing up my interface as easily. (if that's how it works)

I'm worried well, I just want to be safe.

I don't know if its a default package that is installed when you jailbreak, I don't think it is.

It's extremely easy to uninstall, just go to Cydia (the jailbreak management app) and uninstall from there.
 
Openssh is the name.

It is not installed when jalibreaking, it needs to be installed manually, some tweaks depend on it though and it might be installed if you install those, cydia always lets you see what it installed.
Changing the default password is a smart idea and not that difficult, after that you are secure again
 
If you need it or want it to be installed, to be next to as secure as when it is not installed just change your password.

It will prompt you to change the password to anything. Remember when you type the old password "alpine" and when you type your new password it will not give you visual feedback that you have written anything. This is just how stuff works on *nix platforms :)
