so i was on iOS 5.1.0 on my iPhone 4 and updated to 5.1.1 today and i am jail breaking with absinthe 2.0.4

imy iphone has been stuck on the restore but hasn't loaded with the bar below the apple.

absinthe said it was waiting for a reboot but not done yet and not to unplug.

it's been like this for an hour

can i unplug it and hold down the power button and center button and it will be okay?

You can't brick an iOS based device. Hold down both buttons to force it to restart. If that doesn't work, put it into DFU mode (Google it) and restore it in iTunes.

you can brick, but using absinthe or other well tested tools for jailbreaking should next to almost certainly not do it(next to impossible). And since the OP said it has something on the screen, thats also an indication of a device that will be okay after a restore.

The only way a non-Dev Team member or other highly skilled iOS hacker could brick on is by using ZiPhone on an iPhone 2G. The iPad 2, iPhone 4S, and iPad 3 cannot be bricked, even by the iPhone Dev Team. The tools that Dev Teams release are highly tested to not brick a device.
