Hello,
I cannot remember if i upgraded via OTA or itunes when I upgraded to 8.1. what is the best method to jailbreak my phone using my macbook? I recently did a restore from a backup of 8.1 via itunes.

There a Mac version on pangu 's site. Just download it and run. It tells you everything you need to do as you go.

The entire process literally takes two minutes.

I updated to 8.1 with iTunes then set up as new. Ran pangu then restored from a backup wth iTunes. Then installed the cydia tweaks I wanted.
 
Alway be safe and restore via iTunes before jailbreaking.

have you been able to reboot?(slide to power off)

that cause me to freeze on the apple logo

does not freeze if I do not restore from a backup after jailbreaking

I've not tried to be honest. I never turn my phone off.

Restore from backup and itunes restore are 2 different things.
What the restore from backup does is copies over your info and settings to the phone such as contacts, texts, email accounts, pictures etc....
iTunes restore restores the phone to the latest stock iOS version.

I have learned from trial and error, if you plan on using a restored backup

backup, restore to clean, jailbreak, restore from backup than launch cydia

I was lunching cydia first and than restoring from back and it was causing boot freezing after a power down

I will restore to original from itunes, JB, then restore from backup.
