Looking at the Health App Calendar view, it goes December 2015, January 2015 and then February 2016.

What has happened to January 2016?

I've found if you change your region to U.S it fixes it. Is yours set to the UK?

I find Health to be a terrible app.

It doesn't sync my data reliably, and the charts are basic to the point of pointlessness, so I've disabled it.
