I had to do a clean install of OSX 10.8.1 yesterday, using Migration Assistant to bring back everything except settings (had some glitches since going from 10.8 to 10.8.1 followed by a complete crash where the machine refused to boot).

Java started running at 500%+ which I guessed was Crashplan, as that is known for high Java usage and I assumed the fresh install confused it and caused it to think it was a new machine and thus it was backing-up crazily.

However, I've now quit Crashplan and the Java usage continues. Screengrabs of Activity Monitor, the process and parent process.

Any clues as to what's going on before I make another call to AppleCare?

You used Migration Assistant, that brought back Java from 10.7 or 10.6 and it is known for incompatibilities. You need to remove the old Java and install a 10.8 compatible version.

This may help.
