i have been lucky enough to to get a new 6 plus from my insurance after losing my old one. Lucky because it is running iOS 8.4!! What is the best way to go about jail breaking? Can I install 9.0.1? Or it not being signed anymore or does that only affect downgrades?!

The only OS you can install right now is 9.2.1. If you want to jailbreak, you need to stay on 8.4.

If you have a device jailbroken on 8.4, then if anything goes wrong as far as software goes, you can use Cydia Impactor to restore to a pristine state, re-jailbreak, and start from scratch. In this case, "JB for life" is the life of the physical device. As long as my 5S keeps ticking, I will have a jailbroken 8.4 no matter how badly I might mess things up in the software
