My MBP died and was out of warranty (2016 model that was dropped and smashed the screen and dinged the corner) so I decided to get a new Mini M1 512GB model and it arrives tomorrow. However, if Apple releases new Minis next week during their announcement, is it possible to return this M1 model for the latest if I think it will be better and cost about the same? Does the 14-day return window come into play or would I have to fib and say I don't like it, return it, then buy the newest?

This is Apple's return policy. It says you have 14 days and doesn't say anything about whether you need to like the purchase. Have never done this myself, but think you would have to wait until they receive it and refund your money, then you can buy whatever you actually want.

Yes. You have 14 days, no questions asked. ...Litterally ! ...Keep everything in pristine, new Condition.

Unless you must do any computing, I suggest don't even open it. ...Just wait the ~5 days and see what releases.
