You heard wrong. All you have to do is restore the phone if there is a problem.

If you make a mistake, you can brick your phone. If you read the hacks thread, you'll see stories of people who screwed up their JB. Most of them are user errors, but if you think it's a possibility then don't do it.

The only part of any iPhone that can be "bricked beyond repair" is the Baseband.
An iPhone with a bricked Baseband will still "work", it just won't be able to connect to the cellular network.
Baseband modifications are only made during an UNLOCK not a jailbreak. Jailbreaking does not even touch the baseband. So if you have no intentions on unlocking your phone, and you just want to jailbreak it, you are 100% safe.
The baseband does not have a "DFU" mode like the main system. Once your baseband's software gets F'ed up, its dead for good.
