I just did some upgrades to my 2009 Mac Pro quad-core 2.66.
I upgraded the memory to 16gb, video card to radeon 5770 (formally geforce 120), and an OWC 240GB SSD HD.

I'm a working photographer and use Canon 5D MK II's along with a Hasselblad H4D 40.
The softwares I use most are Photoshop CS5, Aperture 3, and Phocus (Hasselblad software).

I intend to use this computer everyday for at least three years.

Any other mods that you can think of that can make a difference?

very nice upgrades, with a hard to beat cost/benefit ratio. That'll do for your current needs and the SW you use.

Later on, as prices keep dropping, you can get another SSD and put them in RAID 0, and upgrade to 24 or 32GB RAM. If future versions of photoshop or aperture take better advantage of GPUs, you could upgrade to a yet bigger graphics card.... and finally, there's the CPU upgrade. But the cost of all that is not efficient at the moment anyway.
 
yeah the only other slight mod you could have made, was to get 2 120GB (i think OWC has 115GB) SSD's instead of 1 240 so you can raid 0 them from the start.
