In Lion, many found out that the first option (which you could select Blue or Graphite in SL) is greyed out.
If you want to know why it's greyed out, just hover your cursor over the menu. A tooltip will appear with all the necessary information...

* The world is very big and it's much likely someone else found out before me. But in weeks, I noticed no-one mentioned it. Even the video at the front page today doesn't mention it why. So... here it is..

** I'm writing this from my SL partition (Lion partition on external disk, and not here at the moment), so I don't know exactly what the tooltip exactly. If someone wants to post a screenshot of the tooltip, please? Thanks.

Wow, it's nice of Apple to provide a little explanation there!
Does this mean they might change the appearance more drastically later, instead of just re-enabling Graphite?

It could mean that, or it could mean they just haven't updated the graphite versions of the buttons/loading bars/etc yet. I would love to see them offer more color options, but I wouldn't be surprised if it ends up being just blue and graphite again. :eek:

I hope they offer more color options, especially for the sidebar icons. I'm not loving the iTunes 10 UI.
 
I don't like Graphite because it's not grey, it's slightly purple grey, which I think doesn't look good for some reason. I would love a black glossy theme, or that you can choose any color from a color picker (for the buttons and scroll bars).

I think this is the most likely explanation. They changed a lot of the interface elements and it's pretty reasonable to assume that they just haven't updated the graphite versions.
 
Judging by the video and screen shots of Lion it doesn't seem like there are that many elements left that use appearance colour anymore anyway. Seems like active buttons and progress bars are the only ones that use still use this colour. It's gone from Scroll Bars, Group Tabs, Popup Lists.

Yes I'm hoping like Highlight Colour it becomes completely user choice with a few well chosen default colours. I do prefer Graphite personally it's just tones things down to be less garish so although with extreme reduction in use the blue may not be so bad.

Any sign that they maybe standardizing on a sidebar background colour?
What with a couple of greys and a blue across various Apple apps. it would be good if this was user definable as well?
