I have an OTB 3.0.1 3G S, which I jailbroke, then used the dev team's tool to update to 3.1 (jailbroken).

To get to 3.1.2 (jailbroken) I need to:

1) Update to official 3.1.2 in iTunes

2) Use blackra1n to jailbreak it

Correct?

Yes, as long as you don't want to UL it. You can JB the official 3.1.2 on any device regardless of whether or not it was previously JB.
 
In terms of future unlocking, I have a thingy on file with Cydia/Saurik if that's any use?
 
So what was the point of having the 3.1 SHSH thingy on file with saurik?

Just to be clear, I've NEVER been on official 3.1, only jailbroken.

It would allow your 3GS to downgrade firmware since the 3GS wont install unsigned code (thanks to the 3.1 update for turning that "lovely" little feature on)

And since Apple stops signing firmware the second a new one is out. Having your SHSH on file with Saurik would allow your phone to downgrade to another firmware by having itunes look at his server not Apples during the restore process.
