So,

I have a Mid-2015 27"iMac that came with a 1Tb Fusion drive. I've replaced the HDD for a 960Gb Sandisk SSD. As Apple SSD is super fast, I kept it.

As you know, this iMac has a 24Gb SSD. It's too small to almost anything, so I decided to "fusion" it with the new SSD, by following the DIY Fusion instructions out there. And the iMac is sparkingly fast.

As it is a Fusion Drive, but made with SSDs only, will APFS work with this thing? Or should I just forget the Apple SSD anda install High Sierra only in Sandisk's SSD?

I would think APFS will work, since the OS will know you only have SSD's. The one requirement for APFS is a SSD, so I say you are good! Some of the super technical people on these forums should be able to tell you if it will convert to APFS or not because you made a SSD Fusion Drive, which is pretty cool I must say. Where did you find the instructions to do that?
