I've just setup a new iphone for my little one and have applied most of the necessary kids settings. But for some reason can't figure out a way for them to not be able to adjust the icloud back up options (messages, photos, mail etc).

Is it possible to do this so these options are greyed out to them?
 
Thanks twintin. I might just leave it be. I don't think she'll play around with these settings,byt she an be the cheekiest of cheeky little 💩's so will be firm with her

The other thing I've been trying to suss out is how to stop access to settings / icloud / sign in and security

Im really surprised Apple hasn't restricted these things for kids
 
If I were you I would relay try Assistive Access. You can switch between that and the regular UI with a pass code. In such way you kids will not be able to change any settings and you can control which apps shall be available to them.

Not an ideal solution perhaps, but I still think it is adequate for your needs abd worth a try.
