So with Apple's quite obvious push to make Macs into Pro only, or at the very least highly premium devices and having the iPad occupy the space where say, the MacBook or even there Air would have sat in it's lineup... do you think there is an appetite for a larger 12+ device with more affordable specs and design.
Say a non-X processor, 60hz display, regular ass IPS with no special treatment and as much as it pains me, Lightning - though hopefully USB-C could trickle down and maybe they'll add a second USB-C port to the Pro.

I'm just thinking since getting an iPad Pro with a similar screen size and storage to a 13" MacBook Air works out almost the same in terms of money And i'm sure iPad becoming more computer-y would lead to people wanting a larger screen device to do stuff on, but don't need all the features of a Pro.
 
I don’t think that a cheaper really big iPad is on the way. For a budget-friendlier version one could look at a second generation iPad Pro 12.9.

I also don’t think that Apple’s plan is to price the Mac solely in “Pro” territory, but they’re surely trying to make sure that the profit margins stay in place.

BH Photo has had brand new 2017 12.9 on clearance sale for a while now ($679-699 for 256GB LTE and $719-799 for 512GB LTE). That's cheaper than the 10.5 and Apple Certified refurb WiFi-only prices.
 
I don't know where you got the idea that the Mac would be "pro" or "premium" only. The MacBook Air update was recent and many of us expect new MacBooks at the fall keynote.
