I have an iPhone 12 Pro with iOS 17.5.1. I want to update this phone to the last version of iOS 17 which is 17.7.2 (and avoid iOS 18). But this phone won't be available to me until late January 2025. Does any one know when will Apple stop signing 17.7.2?
 
17.5.1 is eligible for delay OTA to 17.7.2. You’ll need to back up your phone, wipe it clean, supervise it and use delay OTA to get 17.7.2. Then restore from your back up.

You would want to update to iOS 18 anyway since there is a pile of security updates that you won't get in 17.7.2
iOS 18 isn't bad, and for devices that don't use AI its pretty much like a iOS 17 update.
Sure, the photos app takes a while to get use to, but you can customize it to your liking.

I went iOS 18 and thought I would be in for a painfull ride, but it wasn't.
