do LG's 34" 3440x1440 displays work at 60Hz with the latest Mac mini, including the entry-level option?

The Intel Iris is certainly able to drive it, since the required pixel clock to drive the this resolution at 60Hz is well within its specifications.

Intel Iris and Intel HD 5000 (the low end model mini has this) is really the same graphics core, the only difference is the speed of the GPU (1.3GHz vs 1.1GHz) and the thermal specifications.
 
What about 2 X LG 34" @ 3440x1440? Since new Mac Mini has 2 thunderbolt 2 ports. That would be awesome if possible. :D

Probably you won't have a problem with that. I am using a 13" rMBP which has the same Intel Iris. It can drive its built in Retina display and a 4K external display simultaneously (albeit the 4K works only at 50Hz - because of a TB2 bandwidth limitation). This is 4+8=12 million pixels. The two LG displays would mean a less than 10 million pixels.

You can get up to 3600x2000@60Hz with Intel Iris. The actual resolutions that shows up in the selector depends on the display's EDID info. But you can always create custom resolutions with SwitchResX.
 
sorry for bumping this thread, got the same problem with my iMac mid 2014, when i connect to my LG tv, no signal, but my iMac detects the LG tv.... help plsss
