I know why to jailbreak. I just don't know why I shouldn't. What about software updates? Do you have to wait for them to be jailbroken before updating?

Yes. How that is considered a reason NOT to jailbreak is beyond me. If you prefer to keep your jailbreak, then do so. You have the option to turn down the upgrade. If the new features are more appealing than what you've gained by jailbreaking, then upgrade.

Okay, so I talked to my friend about it. He says you can't really use iTunes after you do it... Is that true? Can't you still sync? Don't you just reject the option to update? He also said you can't use some apps...And he told me not to install SSH....Any opinions on this?

Yes, but you have choice to update or not. The biggest limitation is that if you screw up (and you can never say it won't happen), you render your phone useless or you lose data you didn't back up.
I used to JB, but after a scary experience where my phone was completely black for several hours, I said never again.
