I have an iPad Pro 11". I think it is first or second gen with USB-C. At work I keep track of orders coming in by writing them down in a book with lined paper. I would like to go digital with this for a few reasons. I want to be able to hand write as that is much faster for me to quickly jot something down naturally like a pen on paper. I have an Apple Pencil on order but have not really looked into what app would be best. Does Notes convert handwriting well for lists? Basically I jot down a company name, contact, and very brief info on the job or a docket # for the job. So not excessive writing, just enough to know what is in progress or what I need to do. Was thinking of using Notes or Pages, basically whatever is simplest for writing lists. Any suggestions would be appreciated.

Notes works great. You can choose the regular pen to keep them handwritten or the pen which converts as you write. Or you can convert the whole thing after. Recommend some kind of matte screen protector to mimic the feel of paper though, writing on the glass is a horrible experience, for me at least.

Good to know, thanks! I definitely would want it to convert to proper text after writing. Hoping this lets me blend the natural feel of writing while giving me the digital and cloud functions.

I ended up going with a different app, using Goodnotes. I found found I the converting to proper text to be more inhibitive, if I stopped writing it converted and then picking up naturally again was just frustrated. Going to keep with handwriting as it is much more natural to quickly jot things down this way. I am finding Goodnotes very intuitive and natural with the paper layouts they have. I don't like that it is subscription but it is only $12.95 CDN a year which is not bad. I mix that with a doodle app just for jotting numbers and things down in the moment that I don't need to keep. Already saves a bunch of sticky pads and scrap sheets.

Another app that does this really well is Nebo.app from myscript.
Thanks for the suggestion, having a look at it. Seems similar to Goodnotes for what I am looking for. Looks like one time price as well which I do like as I would rather just own it then pay for a subscription. Looks a bit limited compared to Goodnotes with the types of paper templates you can have. I am using one in Goodnotes that has a side bar that lets me have a column for each note I jot down which is nice for me to indicate if it is something I need to quote, deliver, proof, etc.
