Is there a way to make a list of all my apps in my Applications folder? (Besides typing them out manually of course!)

Depending on what you want, you could do:

Open Terminal
type:

cd /applications
ls
cd utilities
ls

And so on for any other sub-folders... and you could copy and paste the output into whatever you want....

Cool, thanks. Who knew you could do stuff in Terminal? :p

If you want to know all of the applications on your active drives, you can use System Profiler to give you the information.
