Is there a particular file that holds the data for the Stocks app that would allow me to easily edit and rearrange symbols?

Well unless Apple's changed things between your version and 2.2, it's in /var/mobile/Library/Preferences/com.apple.stocks.plist

Looks like the info you want is in the 'stocks' enum.
 
What do you mean rearrange symbols?

I mean change the order the symbols are displayed in. I know I can do this graphically but it takes forever.

Ok, I'll have to look there again, but I could swear I'd checked that out some time ago and it wasn't in that file. Granted, that was with version 1.x of the firmware...
