I unlocked my iphone 1.0.2 but i decided to upgrade to 1.1.1 but i couldn't unlock it so decided to put it back down to 1.0.2 and also managed to change to firmware to the proper version.

But when trying to unlock/activate it just says wrong sim ?

I tried using iNdependence but it won't unlock/activate

You've more then likely bricked your iPhone. I'm not sure if there is a way to bring it back.

You can probably solve the situation by following another guide on jailbreaking your iphone.

The easiest way would be to upgrade once again to firmware 1.1.1 and then visit jailbreakme.com to get it jailbroken, then install anysim 1.1 using installer.app and run it to unlock your sim card.

Don't upgrade to 1.1.2 yet, that's another can of worms.
