My grandmother has passed away and she had an iphone 8, no idea why, but my cousin convinced her... lol
We tried to get into her phone and reached a point where we're locked out.

From what I read, there is no other way to get to the phone without doing a factory reset.
However, we need to access her contacts because of family and friends and possibly anything else that may have been on the phone.

I've read that it's next to impossible to get into the phone.

Does anyone know if apple would be able to bypass the phone, or give the user's apple ID with proof of executor of the Estate, or a death certificate.

I'm sorry but it's not possible to get into that phone. Even Apple can't do it. But they will give you access to her iCloud account data with an appropriate court order. Her contacts might be there.

There is no way to get in.
Apple can’t do anything and won’t do anything. Maybe if you have a lot of loose cash, like $10k?, a private tech firm can crack it, but that’s about it.
